1 3/4 cup All-Purpose Flour
3/4 cup White sugar ( I using 1/2 cup)
1 tsp Baking powder
1/4 tsp Baking soda
1/4 tsp Salt
1 tsp Cinnamon powder
2 large Eggs, lightly beaten
1/2 cup Unsalted butter melted and cooled
3 ripe large Bananas (approximately 1 pound or 454g) mashed well
(about 1 1/2 cups) ( I using 1 cup)
1 tsp Vanilla essense
Methods:
1. Preheat oven at 180c .
2. In the large bowl combine the flour, sugar, baking powder, baking soda,salt and
cinnamon powder. ( walnuts or pecans add in here)
3. In another bowl combine the mashed bananas, eggs, melted butter and vanilla essense.
With a spatula lightly fold wet ingredients (bananas mixture) into the dry ingredients
just until combine and the batter is thick and chunky.(not to over mix the batter,
don't want it smooth)
4. Spoon the batter into the prepared muffin tins. Bake about 20-25 mimutes or until
a toothpick inserted in the center comes out clean.
5. Place on wire rack to cool for 5 minutes and remove muffins from pan.
Note : You also can add in 1 cup of Walnuts or Pecans.
( Baking the nut on the baking sheet and bake about 8-10 minutes or until
lightly toasted. Let cool and then chop coarsely.)
